Salmon with Oven-baked Potatoes

Salmon with oven-baked potatoes is an easy dish with lots of different taste stimulators.

Ingredients

(4 people)

4 portions of salmon on 150 gr.
3 peppers – red, green and yellow, thinly sliced
3-4 spring onions, sliced into small boats
Fresh potatoes
Chopped onions
Various dries herbs like masala, chilli, turmeric, roman cumin and coriander, cardamom (not too much) and cinnamon (not too much).
Sweet corn
Salt

Instructions

Peel the potatoes and slice them into slices. Place on a dish and pour a little oil on top. Season with salt, pepper and mixed dried herbs – do not overdo it, but proportionally more chilli and turmeric. Stir the spices into the potatoes and place it on the oven to cook for 45 minutes at 200°C.

Slice the peppers and the spring onion into bits in a mixture of oil and margarine or butter on a pan in medium heat for a few minutes. Put in the sweet corn at the last minute. Take the mix off the oven.

Season the defrosted salmon with salt and pepper and a little sesame. Fry on the pan for approx. 7 minutes. First for 4 ½ minutes on one side and then 2 ½ on the other. If the salmon pieces are large then they can have a minute longer, but be careful not to dry them up.

Now remove the potatoes from the oven and place the vegetable mix on top, and then add in the pieces of salmon.
