Spaghetti with salmon in cheese-sauce

Who doesn't love spaghetti? Often children as well as grownups need a fast and easy dish full with nutrients that can be cooked in minutes before moving on to for example sport or other things.

Ingredients

(serves approx. 2 adults and 2 children or 3 adults)

4 x 125 gr. salmon portions
25 gr. butter
2-3 thinly sliced red onions
1 thinly sliced leek
1 thinly sliced red pepper
5-6 dried tomatoes
1 tablespoon of oregano
100 gr. cream cheese (you can use any kind of cheese cream)
A little apple juice, white wine or water
300 gr. spaghetti, but preferably a little more, if you like pasta
(fresh spaghetti tastes better than dry)
8 slices of smoked salmon
Maybe some parsley, parmesan or other grated cheese

Instructions

Slice the vegetables thinly and fry them in the butter in a medium-sized pot. When the vegetables have been fried, reduce the heat and put in the cheese and oregano. Let it simmer, while the salmon is fried and add the apple juice, white wine or water.
Season the pieces of salmon with salt and pepper and fry them in oil or butter on the pan for 15 minutes.
Cook the spaghetti as directed on the packaging.
Cut the smoked salmon into little pieces and put it into the sauce immediately before serving.
Strain the water from the spaghetti and mix the spaghetti into the sauce.

You can sprinkle parsley, grated parmesan or other grated cheese on top.
Serve with baguettes.
